Roasted Mixed Mushrooms
4 Compliments Portobello Caps, cut into 1-in cubes; 2 pkgs Compliments Sliced Button or Cremini Mushrooms; 2 pkgs Compliments Shiitake Mushrooms, thinly sliced; 1 red pepper, diced; ½ cup diced onion; ¼ cup olive oil; 2 tbsp balsamic vinegar; 2 tbsp chopped garlic; 2 tbsp chopped rosemary; 2 tbsp thyme leaves; 1 tsp salt; 1 tsp black pepper; ¼ cup finely chopped parsley. Directions: Preheat oven to 375 degrees. In a large bowl, mix all ingredients except the parsley. Spread mixture evenly in large roasting pan. Roast 10 min., stir and return to the oven. Q: I don’t see very well out of my lazy eye. Is there any way I can make it better? I’m 39 years old and my eyes are otherwise healthy. A: That is likely difficult. A “lazy” eye means it didn’t develop functional vision by early childhood, and this can happen for a variety of reasons. At this point in your life, corrective lenses or vision therapy could give you some modest help, depending on how lazy the eye is. Children ought to have an eye examination at an early age for this very reason as it is more easily treatable at that time.
