But what’s a celebration without delicious food? To kick off Nutrition Month, we’re excited to share a couple of mouth-watering recipes that are nutritious and easy to prepare:

Grilled Salmon with Roasted Vegetables

  • 4 Salmon Fillets ( any fish will do)
  • 2 cups vegetables of choice (zucchini, tomatoes, cooked peas, carrots)
  • 2 tablespoons olive oil (canola or vegetable will do)
  • 2 cloves of garlic minced
  • 1 teaspoon dried herbs (parsley, thyme, rosemary)
  • Salt and pepper to taste
  • Lemon wedges for serving

In a bowl toss the mixed vegetables with oil, garlic, herbs, salt, and pepper until evenly coated.

Place fish fillets and seasoned vegetables in a cooking pan in the oven at 350ºF and cook until the fish flakes easily with a fork. Garnish with lemon wedges for a burst of citrus flavour.
