Lemon Herb Quinoa Salad 1 ½ cups quinoa, 2 ¼ cups water, 2 Tbsp fresh mint, leaves only, chopped, 2 Tbsp fresh basil, leaves only, chopped, 15 cherry tomatoes, halved, ⅓ cup finely diced red onion, 1 tsp finely grated lemon zest, 1½ Tbsp lemon juice, 2 Tbsp olive oil, ½ tsp salt. Place water and quinoa in a medium pot. Bring to a boil over high heat. Reduce heat to a simmer, cover and cook for 8 to 9 minutes, until tender. When cooked, remove from heat to cool. Add all remaining ingredients, mix well and enjoy.
