Quinoa Salad

1 cup uncooked quinoa (yields ~3 cups cooked)
1 ½ cups cherry tomatoes, halved
1 cucumber, diced
¼ cup chopped red onion
¼ cup chopped fresh parsley
2 tbsp olive oil
2 tbsp lemon juice
Salt and pepper to taste

Cook the Quinoa:
Rinse quinoa under cold water. Add to a pot with 2 cups water. Bring to boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and cool slightly. Combine quinoa with tomatoes, cucumber, onion, and parsley. Drizzle with olive oil and lemon juice, season, and toss to combine.
