Spinach Tofu Smoothie
Add a touch of freshness to your breakfast with this delicious, protein-rich smoothie. It’s a great way of incorporating tofu into the first meal of the day! Ingredients: 3 c. fresh spinach. 2 bananas. 1½ c. chopped frozen mango. 1 c. chopped frozen pineapple. 10 oz. soft tofu. 1½ c. milk or almond/soy beverage. Fresh mint, optional. Combine all ingredients in a blender and blend until smooth. Add extra liquid, as necessary. Enjoy! Pair with a serving of whole grains for a complete breakfast!

3 tbsp. butter, divided 1 lb. 80% lean ground beef Salt, pepper 1 1/2 lb. mushrooms, sliced 1 garlic clove, minced 1 c. low-sodium beef broth 4 oz. cream cheese 1/2 c. sour cream 2 tsp. Worcestershire sauce 2 tsp. Dijon mustard 1/2 tsp. paprika Chopped parsley, garnish Steamed cauliflower rice, for serving DIRECTIONS: 1) Heat skillet, melt 1 tbsp. butter. Add beef, season with salt, pepper. Cook until done, 10 minutes. Transfer to plate. 2) Return skillet, add remaining butter, mushrooms. Cook until golden, 7 minutes. Season, add garlic, cook 1 minute. 3) Add broth, cream cheese, sour cream, Worcestershire, Dijon, paprika to skillet. Simmer, stir. 4) Return beef, combine. Serve over cauliflower rice, garnish with parsley.
