Taco Salad by Margaret Crofton

Ingredients: 1 lb. ground beef. 2 carrots grated. 1 small onion, chopped. 4 stalks celery, chopped. 2 tomatoes, diced. 2/3 c. lettuce strips. ¾ c. mayonnaise. 1 pkg. taco seasoning. 1 c. grated Cheddar cheese. Tortilla chips, crumbled. Instructions: Cook beef and set aside. Add mayonnaise to taco seasoning. Add all ingredients and toss. Top with medium Cheddar cheese and tortilla chips.
