Winter in Manitoba…the weather is cold and the wind is blowing. What better time to snuggle up by a warm fire and enjoy some comfort food. Beef stew has always been a winter favorite. By substituting bison or elk, you are adding more iron and less fat to an already great dish.
Ingredients:
2 to 4 pounds MB Bison or Elk stewing meat
½ cup flour
Salt & pepper
3 cups Organic beef broth
1 Tbsp Worcestershire Sauce
3 cloves garlic
2 bay leaves
6 small potatoes, peeled and quartered
2 to 3 small chopped onions
3 chopped celery stalks
Directions:
Place meat in the slow cooker and sprinkle flour, salt and pepper over the meat. Add remaining ingredients and stir well. Cover and cook on low for 8 to 10 hours or on high for 5 to 6 hours or until the meat is tender. Stir and serve.
