Clean Eating Recipe

Beef Taco Bowl – 2 tsps. coconut oil. 1 onion, diced. 1lb.grass-fed ground beef. 2 tsps. ground cumin. 2 cloves garlic, minced. 1 tsp. sea salt. 3 cups cauliflower rice. Tomatoes or fermented salsa, avocado, cilantro, sour cream and raw cheese for garnish. Heat coconut oil over medium heat in a large saute pan. Add onion and saute for 5 minutes until soft and just beginning to brown. Add ground beef and spices and cook about 8-10 min. Serve meat with rice and toppings.

The theme of this year’s Mental Health Week is “Healing through Compassion.” Throughout the week practice compassion by not only acknowledging suffering but actively demonstrating care and kindness. Compassion can start within yourself and expand to those around you. Examples might include giving yourself a compliment, helping a family member, or volunteering in your community. As you journey through the week, reflect on the questions below. Write down your thoughts, engage in quiet reflection, or share with a friend.
1. What have you learned about compassion this week?
2. How do you typically treat yourself when you make a mistake or experience failure? Compare this to how you would treat a loved one.
3. Consider any challenges you met while practicing compassion. How might overcoming these challenges contribute to your personal growth and ability to empathize with others?
4. Think about all the ways you showed kindness to yourself and others and how that felt. How can you incorporate compassion into your daily routine going forward?

Supporting Physical Activity for Mobility

(SuPA Mobility Trial) This research is investigating the effects of health coaching on physical activity, mobility, and other health domains like cognitive function. The purpose of this research is to determine whether 6 months of one-on-one health coaching or group-based health education sessions will increase physical activity and improve mobility in individuals who are experiencing difficulties with their mobility (e.g., slower walking). There will be one 60-minute and eight 20-minute coaching or group sessions over 6 months.
