Bandit Bowl

2lbs ground beef, 2 eggs
1/4 C green onion
½ Tsp garlic salt
½ Tsp salt
Form Meatballs with the beef, eggs, green onion, salt, garlic salt, pan fry, drain, set aside in oven safe casserole

Sauce:
6 Tbsp brown sugar
¼ Tsp ginger
½ Tsp salt
2 Tsp cornstarch
¼ C vinegar
2 Tsp soya sauce
¼ Tsp dry mustard
6 Tbsp ketchup
10 oz canned crushed pineapple OR fresh pineapple diced
Add Water/or more Ketchup to thicken

Mix sauce ingredients together, pour over meatballs (make sure to mix cornstarch with a table spoon of water before adding to sauce mixture so it does not clump), pour sauce over meat balls bake at 350 Degrees for 45 mintues
Serve over a bed of cooked rice (you can double the sauce recipe of you want more sauce) Enjoy!

For those who lost their homes, cabins, trailers, and pets.. our hearts and thoughts go out to you as you navigate through your losses, and up coming decisions or rebuilds. The courage, strength, and perseverance in this province is amazing.

Help, Hope, Healing for Everyone

Counselling is for everyone, at any age. It supports individuals, parents, children, and families facing challenges. Parenting guidance builds positive relationships and healthy developmental skills and strategies for healthier forms of communicate between parents and their children. Anger management teaches strategies to recognize triggers and respond calmly, managing your emotions and reactions. Even children who cannot fully communicate to a counsellor can express themselves through play, art, and other creative activities for the counsellor to understand their needs. Some schools offer free in-school counselling upon request for children and students. Help is available to create a safe, supportive environments for everyone, whether at work, school or home.

Gluten and Dairy free Pumpkin Bread

2 Eggs, ¾ C Sugar, 1 tsp. Vanilla, 1 C Brown Sugar, 1 C pureed pumpkin, 1 C Dairy Free Milk ie almond, 3 tsp. Baking Powder
2 C Gluten Free All Purpose Flour Blend, 1 tsp. Xanthan Gum, 1 tsp. Pumpkin Pie Spice, Dash of Salt,1 tsp. Cinnamon, ¼ tsp. Nutmeg
Preheat oven to 350 degrees F. Beat eggs, add sugar, vanilla, once creamed add brown sugar, pumpkin, dairy free milk (mix on low). Add the baking powder, xanthan gum, spices and salt. Beat for one minute, add the Flour. Mix on medium for 2 minutes, scraping down the sides halfway through. Grease loaf pan (with coconut oil), pour batter in pan, bake 70 minutes or until a toothpick comes out clean. *omit Xanthan if already in flour
